Those are my first thoughts when I think of quick meals and it usually comes with a side dish of guilt because that means I or someone in my family is getting take-out.

So a guilt-free, family pleasing, and quick dinner recipe is something I am always willing to try.

Unfortunately, most 30 minute or less recipes rely on processed foods to make them quick, but these recipes are healthy eating and can easily be fixed to meet any dietary requirements.

Benefits of Quick Dinner Recipes

  • Needless to say – they make for a quick dinner on a busy night.
  • They don’t require a lot of ingredients so they are budget friendly.
  • They don’t require a lot of pots and pans so they make kitchen clean up easy.

Tips for Quick and Easy Dinner Recipes

  • Prep as much as you can when you have time. Are weekends less busy for you? Then that might be a good time to cut some veggies or meat for dinner during the week?
  • Buy pre-prepped ingredients at the store. These might be more expensive so it’s a trade-off between your time and your budget. When I know I have a busy week ahead then I will go ahead and take the hit to my budget to save some time in the kitchen.
  • Pre-cooked meats like rotisserie chicken are great to have on hand not just for dinner but also for lunch as well.
  • Frozen fruits and veggies are a must in my house for all of your meals, not just dinners. Use them for breakfast like overnight oats, cereal or smoothies. And use the veggies for a quick vegetable for dinner or to use in a casserole.
  • Fix it and forget it cooking pots – think your crock pot, instapot, or air fryer. We even use our toaster oven for quick toasted breakfast sandwiches.
  • Once you find your favorite quick fix recipes, make a binder so you can find the recipes easily
  • Buy the staples – rice, potatoes, pasta, healthy pasta sauce and salsa, canned veggies and beans – and keep them in your pantry for quick meals.

Chicken Fajita Wraps with Cilantro Lime Sauce

Here’s a creative way to use pre-cooked rotisserie chicken for a quick and flavorful weeknight meal.

For best results, prepare the cilantro-lime sauce the night before so the flavors have a chance to thoroughly blend. You can also prepare the fajita seasoning in larger batches and store in an airtight container for later use. Planning ahead will save you even more time on those busy nights you want to get dinner on the table as quickly as possible.

Chicken Fajita Wraps with Creamy Cilantro-Lime Sauce

Yield: 4-6 Servings
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

Portion Containers:  ¾ red (for 4 servings) or ½ red (for 6 servings), 1 green, 1 orange or 1 blue depending on how much Cilantro-Lime Sauce you use.

Ingredients

  • Homemade Fajita Seasoning:
  • 3 T. chili powder
  • 1½ T. smoked paprika
  • 2 t. onion powder
  • 2 t. garlic powder
  • 2 t. ground cumin
  • ½ t. cayenne pepper
  • 1 t. dried oregano
  • 2 t. sea salt
  • Cilantro-Lime Sauce: (orange or blue container)
  • 1 c. plain, full-fat Greek yogurt
  • 1 T. homemade fajita seasoning
  • 1 clove garlic, peeled and finely minced
  • 2 T. fresh cilantro, finely chopped
  • 2 T. fresh lime juice
  • Salt and pepper, to taste
  • Fajitas:
  • 2 T. extra virgin olive oil
  • 1 red bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 orange pepper, sliced thin
  • ½ small red onion, sliced thin
  • 1 T. balsamic vinegar
  • Salt and pepper, to taste
  • 3 c. rotisserie chicken, shredded
  • 2-3 T. homemade fajita seasoning
  • ¼ c. chicken stock, preferably organic
  • ¼ c. fresh cilantro, roughly chopped
  • 3 green onions, green parts only, sliced
  • 2 T. fresh lime juice
  • 1 head Romaine lettuce, washed and separated into individual leaves

Notes

  1. Prepare the fajita seasoning by combining all ingredients in a small bowl and stirring until thoroughly blended. Store any excess in an airtight container for later use.
  2. Prepare the cilantro-lime sauce by thoroughly combining all ingredients in a medium glass or other non-reactive bowl. Cover and place in the refrigerator until ready to use.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, onion, and balsamic vinegar to the skillet and season with salt and pepper, to taste. Cook for 10-12 minutes or until the onions and peppers are crisp tender.
  4. Add the shredded rotisserie chicken, fajita seasoning, and chicken stock to the skillet and stir to combine. Cook until heated through and excess liquid is gone, approximately 3-4 minutes. Season with additional salt or fajita seasoning, if desired.
  5. Remove skillet from heat and stir in the cilantro, green onions, and fresh lime juice. To serve, spoon mixture onto individual Romaine lettuce leaves and top with a drizzle of cilantro-lime sauce. Enjoy!

Tri-tip steak, aka Santa Maria steak (for the California town that made it famous), is a very flavorful cut of meat that is ideal for cooking quickly at higher temperatures. Tri-tip used to be hard to find outside of California, but it is now more widely available thanks to its growing popularity with consumers who love its incredible flavor and relatively lower price point.

This no-fuss recipe comes together in less than 20 minutes, so it is ideal for a busy weeknight meal.

Tri-tipsteak, aka Santa Maria steak (for the California town that made it famous), is a very flavorful cut of meat that is ideal for cooking quickly at higher temperatures. Tri-tip used to be hard to find outside of California, but it is now more widely available thanks to its growing popularity with consumers who love its incredible flavor and relatively lower price point.

Ingredients

  • 2 T. extra virgin oil
  • 1 T. kosher salt
  • 1 t. freshly ground black pepper
  • 2 t. garlic powder
  • 1 T. fresh rosemary leaves, finely chopped
  • 2 lbs. tri-tip steak, approximately 1” thick

Instructions

  1. Heat the olive oil in a large cast iron or other heavy-duty skillet over medium-high heat.
  2. Combine the salt, pepper, garlic powder, and rosemary in a small bowl. Rub the salt mixture on all sides of the steak and place in the hot skillet. Sear steak on both sides, approximately 2 minutes per side.
  3. Reduce heat to medium and continue cooking the steaks for another 6-8 minutes, turning once to cook evenly on each side. This will yield medium-rare to medium steaks (internal temperature of 145° – 160°F). Cook for another 2-3 minutes for more well done steaks. (For thinner steaks, reduce cooking time by 3-5 minutes).
  4. Remove steaks from skillet and loosely cover. Rest for 5-10 minutes
    before serving. To serve, cut steaks in thin slices against the grain for more
    tender results.

  • 8 oz. white mushrooms, sliced

  • 4 green onions, ends removed and chopped thin, white and green parts separated
  • 2/3 c. dry Marsala wine
  • 6 c. chicken stock, preferably organic
  • 3 c. rotisserie chicken, shredded

Instructions

  1. Heat a heavy soup pot or Dutch oven over
    medium-high heat. Add olive oil and mushrooms and cook, while stirring
    occasionally, until mushrooms start to release their juices, approximately 6-7 minutes. Season with salt and pepper, to taste.
  2. Add white parts of onion to pan and cook for 1-2 minutes, stirring once or twice.
  3. Increase heat to high and add the Marsala wine. Cook until wine has reduced to 1/3 of its volume, approximately 4-5 minutes.
  4. Add chicken stock and shredded chicken and bring to a boil. Reduce heat to just below medium. Simmer until heated through, approximately 4-5 minutes.
  5. Remove from heat and ladle into individual soup bowls. Garnish with green parts of onion and serve immediately.
