21 Day Fix Dinners don’t need to be complicated to please you or the picky eaters in your family. The best thing about these dinners is that it’s easy to switch ingredients and create a dinner that everyone enjoys.
I gotta be honest, I hate cooking, especially dinner. So dinner time is the hardest part of the 21 Day Fix Workout Program for me.
I’m tired. I’m hungry. I have 3 teenagers and 2 adults to feed. One’s a pescatarian (eats fish and dairy) and one’s a meat and potatoes kind of person.
So I feel ya if you have people in your house or family that have different preferences or even diets. It can make any mom just wanna go grab take-out.
So, what do you do when you need a healthy and filling dinner option that fits with your 21-Day Fix meal plan and your family? Here are some options to consider.
Foil Meals Make Easy 21 Day Fix Dinners
Foil meals are easy and quick to make. All you need is foil, a little oil, your protein, and your vegetable or carb. They are also easy to make with just the vegetables. My pescatarian daughter made these on our camping trip and loved them, as did my whole family.
Here’s the recipe we used – This Veggie Foil Packet Recipe Is Made for Campfire Cooking. And here is a recipe with chicken:
Chicken and Potato Foil Meal
Here’s the actual recipe – Chicken and Potatoes Foil Packets
You will need boneless skinless chicken breast, potato, and you can add vegetables as well. Bake the mix for around thirty minutes and you’re done. It’s easy and super filling. You can even change it up a bit with different sauces to give it more tang or richer flavor.
Note – Be sure to cook chicken to an internal temperature of 165 degrees F.
Salmon and Asparagus
Here’s the actual Recipe – Salmon and Asparagus Foil Packs with Garlic Lemon Butter Sauce
An easy and protein packed dinner is salmon and asparagus (or any vegetable like squash, zucchini, brussels sprouts). This is a favorite in our house. My son doesn’t really like salmon, so I will have frozen hamburgers that he can easily fix or you can place them on a separate pan in the oven with the salmon and veggies.
You need to make sure that any oil you add is only the amount you are allowed for the day and only approved oils like extra virgin olive oil. This is filling, easy, and healthy as well as something that is easy to find in most stores and can be found on most restaurant menus as well.
Note – Be sure to cook the salmon to an internal temperature of 145 degrees F.
Simple Clean Eating Dinners using 21 Day Fix Approved Ingredients
Adding 21 Day Approved Foods to recipes makes it easy to meet your container requirements and make healthy and delicious dinners that your family will love.
This can be hard to do if you have picky eaters or family members with different diet requirements like our family. My daughter is a vegetarian, my son hates veggies, and my oldest daughter lives off of rice and potatoes.

Sheet Pan Meals for 21 Day Fix Dinners
Sheet Pan Dinners are one of my favorite ways to meet containers for the day and please the picky eaters in the family.
You will often see sheet pan dinner recipes listed as “one pan” recipes as well because basically everything is on one pan.
However, if you have a large family or if most of your family members are teens or adults like mine, then I highly recommend that you invest in at least 2 large sheet pans and some smaller ones as well. You can often find these as kits in stores or online.

21 Day Fix Quick Dinners (30 minutes or less)
As I’ve said before I hate cooking, so anything that can get me out of the kitchen fast and on to binge watching Netflix is a winner for me.
We love them as a family because the ingredients are simple and anyone in my family can fix them without my help, usually😉😉.
I do have 2 teens and 1 adult child in my house so I am blessed with children that can cook for themselves.
